THE AGAVES
It all starts with the Agave, a plant that comes in many forms found all over Mexico. In Oaxaca there are over 100 different types of agave, and you can distill any of them that have fermentable sugars. An agave plant takes anywhere from from 7 to 25 years to mature, based on the variety of agave.
