It all starts with the Agave, a plant that comes in many forms found all over Mexico. In Oaxaca there are over 100 different types of agave, there is close to xx that are commonly distilled into Mezcal. The variety of agave that you can make mezcal from make it something so special, tequila is also made from agave but can only be made from one type of agave. So tasting Mezcal not only varies from palenques (distillery) but the flavor palette from each different type of agave is very distinct.
